CURD CHEESE
INGREDIENT S PREP AR A TION
• 3 litres milk To prepare cottage cheese you can use domestic or full-fat
• 250 g yoghurt or 1 tablespoon vinegar milk which can be obtained in the store. Heat the milk to
(or juice of 1 lemon) approx. 75° C and set aside. Add the yoghurt or vinegar and
mix thoroughly. Let it stand overnight. Cut the soured milk
into pieces and put it in a clean cloth, which is turned into
a bundle. Hang on the tree and allow the whey to drain off.

• 1200 g full-fat curd cheese Mix well the granulated sugar, salt and vanilla sugar. Add
• 100 g granulated sugar two egg yolks and a mixture of sugar and salt into the

• 16 g vanilla sugar Divide the curd cheese filling into two equal parts and store
