BLACK PUDDING









                  INGREDIENT S                                      PREP AR A TION
                  •  2500 g cooked buckwheat kasha                  The procedure is the same as with buckwheat koline, except
                  •  1000 g cooked pork head meat                   that you add pork blood and mix with kasha and meat.
                  •  200 g soup greens                              Sauté the onions in lard, add the kasha, meat and seasoning.
                  •  250 g pork blood                               Pour pork blood over this mixture and stir until the blood is
                  •  water from cooking the head                    evenly absorbed into the mixture. If necessary, add water, in
                  •  1 big onion                                    which pork head was cooked. Fill using the same procedure
                  •  50–70 g salt                                   as buckwheat koline and blanch when finished.
                  •  7 g pepper                                     Place koline and krvavice (black pudding) in a greased
                  •  7 g pimento                                    baking tray and roast for approx. 30 minutes. Before baking,
                  •  5 g garlic                                     pierce the buckwheat koline and krvavice  with a needle
                  •  4 g marjoram                                   several times.
                  •  3 g cumin
                  •  pork intestine with a diameter of 30–32 or 32–34
