PORK  HEAD


                      Remove the hair from the pork head
                      and cook the head in a large pot.
                      Add soup greens, 20 g salt and some
                      pepper. Cook for approx. 90 minutes,
                      then let cool  in  the  water  in  which  it
                      was cooked.

          MIX


          Pour the buckwheat kasha into a pot or saucepan
          and cover with a double amount of water. Bring to
          the  boil  and  cook  slowly  for  about  5  minutes.  Set
          aside and cover with a lid.                                                                        BUCKWHEAT SAUSAGE




                      SEA SONING



                      Sauté the onions in lard, add kasha,
                      meat and seasoning. Stir  well and, if
                      necessary, add  water from cooking.
                      You need a fairly juicy but not too soft
                      mixture.
